So, review -

Brilliant. Am tooting my own horn, but toot f**king toot. My horn is thoroughly tooted.

I'm genuinely a 'medium' kind of guy on the spice level and this was just right - made my lips tingle and took about half an hour to calm down though am now scared to lip my licks because there's probably still a load of it stuck in my beard. Absolutely needed the carrots and celery though as a 'cooling' measure whilst eating.

Best thing is though, I only cooked half the wings in the pack and there was about half the sauce left over which has gone in the fridge so same again on Tuesday!
 
Boiled up a corned beef as a post-Paddy's meal, with red potatoes, carrots and braised cabbage in wine and chicken stock. An enjoyable and low cost feast. But even better, I diced up all the leftovers and made bubble and squeak - everything sauteed in butter. I think the bubble and squeak was better than the main meal.

I used to flat with a bunch of Irish folks living in NZ. One of them had just recently arrived from Cork. Not long after he arrived, I left out a leg of lamb to cook for dinner. He found this leg of lamb and somehow assumed it was corned beef. He then proceeded to boil it. The whole house stank of wet sheep for about a week. And it was NOT tasty.
 
Raspberry sauce for fried duck breast or roasted duck.

While your duck rests before cutting add red wine, honey, raspberries (fresh or frozen) to the pen where the duck was fried and reduce to preferred consistency. This is a basic version and you can add whatever spice you like or citrus rind and juice.
 
Summer rolls filled w. glassnoodles, cucumber, shrimp, spring onions, fresh mint and cilantro

I'm still practicing, this time a bit too much filling.

I also made a peanut sauce: peanuts butter, Nam Pla, soy Sauce, roasted sesame oil, chillies.
