Mac'n'Cheese

My personal quick recipe serves 4 to 6 depending on appetite ?

Cook 500g of maccharoni (in this case penne)


Dice very finely one small onion...

Heat gently one tsp of vegetable oil add diced onions..Cook gently until glassy

Add 100g (liquid) cream (stir)

Add 150ml Milk (keep stirring)

Add 25g of processed cheese (still stirring)

Add 250g of your favourite cheese salsa (nacho dip cheese sauce e.g from Ricos) I even use the cheap one from Lidl

And stir some more until all is evenly disolved and molten

Add salt to taste

Then you can either add some sauce thickener and boil gently until preferred creaminess is reached or gently cook until enough liquid has evaporized..

Drain cooked pasta and put back into cooking pot..add all the cheese sauce and mix well

Serve and enjoy

And for some vitamins a simple fruit salad. Made of apples, bananas, oranges and freshly squeezed lemon juice (and a bit of sugar to taste).

I just did this with the addition of a clove of garlic and some bacon. Yummy! Also, instead of fruit salad I made a tossed salad from tomatos and romaine lettuce.
 
Nice! I also add some bacon bits when I have some…...but we just ate all the bacon at a brunch on Saturday...

I wondered what to do with some leftover tomatoes and a I had a can of peanuts sitting on my shelf, so I just made this.

Spicy tomato salad with peanuts
  • cherry tomatoes
  • 2 teaspoons of curry ketchup (or ketchup plus a pinch of yellow curry powder)
  • white vinegar (lemon or lime juice might work better but I had none)
  • a dash of soy sauce
  • neutral oil or sesame seed oil
  • freshly crushed mixed pepper (black, white, red berries etc.)
  • dried basil
  • dried chili flakes
  • cumin powder
  • salt
  • roasted and salted peanuts
  • small clove of garlic
Mix ketchup, vinegar/juice, soy sauce and oil to get a creamy dressing, season with basil, pepper, chili, cumin and salt according to taste. Slice tomatoes into quarters, chop garlic very finely and add both the dressing. Add peanuts so they make up about 1/3 of the whole salad. Stir and then season again if needed. Serve with toasted bread.

"This one is even bigger." Yep, that was one big-ass lobster and it wasn't yet ready to surrender.
 
Asian style fried veggies and a piece of steamed egg (Eierstich in German but I have eaten similar stuff in Japan Ccalled tamagoyaki) seasoned w. garlic, red chillies, nam pla, soy sc., roasted sesame oil, fresh ginger and fresh turmeric.
I bet you know this, does the Japanese version contain milk?
