Sour-dough and home-made starter.
Raised from NZ yeasty air. Crusty and chewy. Its beery with popcorn flavour. Home made plum jam too..Blessed in so many ways it'll make your eye-balls spin.
I've posted about this before, but here's a shot of the ingredients to Steve's Holiday Clam Dip so you can equate them to what's available near you.
8 ounce package of cream cheese
2 cans chopped clams - 1 can tiny shrimp (North Sea shrimp would be just about right) all are 6 ounce cans. Mayonnaise - around a cup works well. Dash of lemon juice and spices - which aren't listed because everybody has their own preference.
I like a blend of Thai spices and powdered scorpion pepper. Heat cream cheese 1 minute in microwave - add mayo and juice from one can o' clams. (or both if you really like clams) Mix well. I use an immersion blender. Add clams, shrimp and spices - mix in by hand.
There are plenty stingrays here, used to fish them with bow and arrow, cut about the same way as in the video and bbq flippers. I like the idea of cooking them on banana leaf, will try one day.
