Sweet macaroni casserole with quark cheese and sultanas
  • 200 ml of milk
  • 1 litre of water
  • 250 g little elbow macaroni or another type of small pasta to eat with a spoon
  • 250 g of quark cheese or creamy curd cheese
  • 80 g of soft butter
  • 3 eggs, separate yolks and egg whites
  • handful of sultanas
  • 6 tablespoons of sugar
  • Seeds from one vanilla bean or a sachet of pre-made vanilla sugar (don't use vanillin, get the real stuff)
  • salt
Bring milk and water to the boil with a pinch of salt and let the noodles simmer until soft. Strain noodles and wash them in a sieve with cold water to cool them down.

Mix curd/quark, sugar, butter, vanilla and egg yolks in a bowl and whisk until creamy. Beat the egg whites until stiff and fluffy. Mix noodles and sultanas into the cheese cream and carefully blend in the egg whites. Pour the mass into a buttered casserole and bake at 200 deg C for some 30 minutes or until the top is golden brown.

Serve pure or with jam/fruit sauce of your liking.

An art of cooking Galah in a camp oven, this is very very nourishing and extremly tasty and once you have mastered this recipe you can cook and eat anything.

To cook the Galah first pluck and clean the bird and soak in salt water for an hour or two.
Then place the Galah in a HOT camp oven on top of some rocks, round dry river bed rocks are the best.
Stand the camp oven on a good bed of coals and fully cover the lid with coals.
From time to time add fresh coals both under and on the lid to ensure continued high heat.
Cook the Galah until the rocks are soft and then throw the Galah away and eat the rocks.

I'm eating this now : Kumpir; is a very simple and popular street food dish in Turkey. It is actually a Turkish version of baked potato or jacked potato as it is called in the UK. Unlike the jacked potato, which is usually served with cheese, beans and butter, there are many different side dishes to go with the potato. Apart from doner kebab in europe, you can also try this in turkish fast food restaurants for max 3-4€.

Yep, my grandad used to tell me Galah was rubbish to eat, pluck him, boil him, throw the bird away and drink the broth! ;)
