Swiss mountain farmer's toast
- several slices of mature mountain style cheese
- slices of boiled ham
- a large, thick slice of fresh rye bread (not the industrial junk from a supermarket shelf)
- 1/3 cup of milk
- 1/2 cup of dry white wine
- salt, pepper
- sweet paprika powder
- 2 eggs
- Preheat the oven to 200 deg C = 400 deg F.
- In a small cassserole, mix milk and wine and soak the bread. Discard excess liquid.
- Top the bread with ham and cheese and bake until the cheese is molten and starts to become brown.
- In the meantime fry the eggs sunny side up.
- When the toast is ready, put the eggs on top, season with salt and freshly crushed pepper, and sprinkle a bit of paprika on the egg yolks.
