Swiss mountain farmer's toast

  • several slices of mature mountain style cheese
  • slices of boiled ham
  • a large, thick slice of fresh rye bread (not the industrial junk from a supermarket shelf)
  • 1/3 cup of milk
  • 1/2 cup of dry white wine
  • salt, pepper
  • sweet paprika powder
  • 2 eggs

  • Preheat the oven to 200 deg C = 400 deg F.
  • In a small cassserole, mix milk and wine and soak the bread. Discard excess liquid.
  • Top the bread with ham and cheese and bake until the cheese is molten and starts to become brown.
  • In the meantime fry the eggs sunny side up.
  • When the toast is ready, put the eggs on top, season with salt and freshly crushed pepper, and sprinkle a bit of paprika on the egg yolks.
