Beef and broccoli

Chorizo ragout
250g =0 8 oz. of mild chorizo sausages
1/4 of a celeriac/celery root
2 carrots
some leek
2 red onions
1 clove of garlic
2 tablespoons of tomato paste
1 dash of honey
1 yellow bell pepper
smoked paprika powder
sweet paprika powder
freshly ground pepper
salt
thyme
marjoram
rosemary
dry red wine
250 ml = 1 cup of strained tomatoes
olive oil
  • Cut sausages into thick slices
  • Clean and peel celeriac and carrots. Dice the celeriac and slice carrots
  • Peel onions and cut them into rings
  • clean leek stalk and cut into thick slices
  • wash bell pepper and cut into fine stripes
  • peel and mince garlic
  • Gently fry sausages pieces in olive oil
  • add veggies + garlic and sautée
  • add spices and herbs
  • stir in tomato paste and honey and roast this until lightly caramelised
  • deglaze with wine, then add the strained tomatoes
  • Cook on low heat until veggies are good but still have some bite to it.
  • Season again if needed.
Serve with rice.
 
This spring here is a joke so far and I could do with more “warm meal” too, be it stew or something else.

Spring weather is very much “moody”, this year takes the cake. Possibly sunny and 20c early next week.
 
Currently on the shores of northern France with my father again. I’ve been trying to explain him what’s Wifi, 4-5G and why is his internet bill so expensive and he just stare at me like I’m a Martian 👽

For dinner we had lasagna and no complaints about that at least.
