Salmon?

Just the night before last, I smoked about a pound of fresh salmon filets over alderwood for 25 minutes after my wife had kept them in the fridge in a course rub of brown sugar and kosher salt.

So good later on with crackers and a creamy dill sauce.

Just the night before last, I smoked about a pound of fresh salmon filets over alderwood for 25 minutes after my wife had kept them in the fridge in a course rub of brown sugar and kosher salt.

So good later on with crackers and a creamy dill sauce.

I do same but smoke it for over an hour at 50c or at least try to keep it under 60c, makes deeper smoke flavour and juicier inside. We don't have alder here so I use applewood.
 
Saw a youtube video of a guy roasting a chicken on a gas barbecue so had to have a go at it. Salt, pepper, garlic granules and Za'atar, with applewood chips for some smoke.
